●BASE
Authentic Kasutori juniper sake
We used "Nishikigawa" shochu from Sakai Brewery in Yamaguchi Prefecture. It is a sake that you can enjoy the strong taste and aroma of rice made by traditional methods.
Absinthe that goes well with red bean paste
We used two types of lees-dried shochu as the base. Please enjoy the exquisite balance between the powerful scent of Hirasen and the gorgeous scent of Amabuki.
Hanemomo Gin
We use a blend of raw alcohol and Amabuki Sake Brewery's Ginjo Kasutori Shochu. The refreshing scents of melon, white peach, and green apple, which are unique to ginjo sake, complement the botanicals.
●BOTANICAL
Authentic Kasutori juniper sake
Botanical composition close to LAST MODEST. While making use of the scent of shiso and mandarin orange, it has a mellow finish that makes use of the unique sweet nuances of regular kasutori shochu.
Absinthe that goes well with red bean paste
The sweet scent of rich milk and the freshness of wormwood can be felt, creating an absinthe that is perfect for red bean paste. You can also enjoy the aroma of cacao husk from Whose Cacao and the sweet scent of matcha from TeaRoom.
Hanemomo Gin
As a key botanical, we used peaches from HOPE Garden, an orchard in Yamanashi Prefecture that is particular about growing fruits that use as little pesticides as possible. We use peaches that are not normally distributed in the market, such as those that have been “splashed” due to small scratches or black spots, or have fallen due to wind and rain.
●Recommended way to drink
Authentic Kasutori juniper sake
Gin: We recommend mixing hot water at a ratio of 1:2. Some people may be surprised to hear that gin is mixed with hot water, but please try it once.
Absinthe that goes well with red bean paste
1. Prepare an empty plastic bottle or protein shaker
2. Add 30ml of absinthe , 90ml of milk and 5 ~ 10ml of gum syrup and shake.
3. Pour into a glass with ice and drink!
We recommend pairing it with milk this time because it goes well with vanilla, cacao, and tonka beans!

Hanemomo Gin
ENIGMA with peaches, peach leaves, fig leaves and juniper berries. This time, we combined amazake and elderflower tonic to bring out the faint scent of peach and its juiciness to the finish!
①Enigma 30ml
② Amazake 30ml made only with koji (You can buy it at Seijo Ishii!)
③Fever Tree elderflower tonic 60ml
-Pour ①② into a glass with ice, stir and cool.
- Add ③ and mix lightly to complete!
